Did you know that the taste of an onion changes depending on how it's cut? If you cut the onion vertically (from the top to the root), fewer cells are damaged, resulting in a sweeter taste. These soften quickly when cooking non-vegetarian curries and give thickness to the gravy. Cutting horizontally breaks down the cells, increasing the pungency. These are better for salads. However, when cut horizontally, more enzymes are released, causing more tears.
